All meats are smoked with real fruit wood for up to 20 hours
When it comes to our Smoked Brisket we do a low and slow 20 hour cook with cherry wood. Each brisket is spritzed every 1/2 hour to keep everything nice and juicy. At hour 20 the “bark” is perfectly crusted with an amazing pink ring on the inside.
Each prime rib gets a full coat of a dry rub mix of seasonings for 4-5 days. Start to finish this piece of meat smokes for 12+ hours with real fruit wood. Finishing with a perfect golden crust and juicy inside.

Our Pork Spare Ribs are smoked low and slow for about 6 hours. We rotate between Maple, Apricot, Cherry, and Walnut woods. Each rack is spritzed every half hour to keep everything nice and juicy. Once they are pulled off the grill they fall off the bone with a golden crust.
We use full pork shoulders that are injected with special seasonings and an apricot marinade then brined for 3 days. While on the smoker for a 16+ hour cook each shoulder is spritzed every 1/2 hour to keep them nice and juicy.
Our Tri-Tip is injected with our fruit juice mixture and seasoned before going on the smoker for a 12 hour cook. All of our meats are cooked low and slow with a spritz every 30 minutes to keep the moisture locked in.
We have created our own seasoning mixture that we hand mix into our handmade burgers. We top them with a high-quality bun and different kinds of cheeses. They also come without cheese per request.
Our chicken is seasoned and then brined for 12 hours. Then onto the smoker it goes for a low and slow 2-3 hour cook. It comes off the smoker with a beautiful pink smoke ring and juicy inside.

With each tenderloin you get the choice of wrapping it in bacon or just hand seasoned. Cooked on the smoker low and slow for 6+ hours with a variety of fruit woods.
We can also do your regular plain jane hot dogs but our go to is high quality sausages. These are a perfect pair with our hand pressed, homemade hamburgers.
We can do custom orders for your choice of cut and size of steaks. We top them with our special seasonings and smoke them with a variety of woods for roughly 1-2 hours.
Each of our turkeys are roughly 15-17lbs each, brined for 12+ hours in a mild salt water mixed with fresh herbs. Then onto the smoker low and slow for 12+ hours, with a spritz every 30 minutes with our unique fruit juice mixture. After 12 hours they come out with a perfect golden crust and juicy inside.
Each full chicken is brined in a mild salt water, fresh herb mixture for 12+ hours. They smoke for up to 12 hours standing straight up to get that perfect golden crust on every side.

Our beans smoke with bacon, sautéed onions, green peppers and other ingredients that make them so unique to us! They typically smoke with which ever meat you choose for 4+ hours. Each full pan feeds roughly 60 people.
This pasta salad is jam packed full of flavor. Made with 2 meats, 2 cheeses, 2 kinds of peppers, olives and much more! It is our own special spin on your typical Italian Pasta Salad.
This potato salad is packed full of flavor but also perfectly simple for any event.
Our smoked Mac and cheese is homemade with 4 different cheeses topped with toasted bread crumbs. All of our sides are made fresh the day of your event and this mac and cheese will never disappoint.
Our “Road Flares” are a fire inspired twist on the viral “shotgun shells.” They are a manicotti pasta shell stuffed with our mixture of 3 cheeses, special seasonings, ground beef and finally wrapped in bacon. We recommend 2 per person or more if you are feeling adventurous ;)
Closely compared to the potato salad, it is the perfect simple side for any pairing of meat for any event.
Made with perfectly cut romaine lettuce heads, crunchy croutons topped with Parmesan cheese.
Cole Slaw has always been a staple side when it comes to everything barbecue. We recommend it with our pulled pork and also our brisket sandwiches!
This casserole is mixed with 2 cheeses, red bell peppers and potatoes topped with French onions and chives upon request.
These green beans are packed with sautéed onions, red peppers, garlic and bacon. Special requests for no bacon are always welcome :)
